The Asprinio d'Aversa grape is among the more obscure of Campania's indigenous varieties — cultivated in the Aversa area of the Terra di Lavoro north of Naples, where the vines are trained up tall trees in the traditional vigna maritata system, sometimes reaching heights of ten metres or more. The grape's name itself signals its character: asprino derives from the Italian for sharp or tart, reflecting the naturally high acidity that makes Asprinio wines distinctive and that provides the backbone necessary for sparkling wine of this style.

The Charmat lungo method — in which secondary fermentation takes place in pressurised tanks for an extended period before bottling — allows the Asprinio's characteristic acidity to integrate with the effervescence in a manner that develops the complexity and persistence of bubble that distinguish this wine from simpler sparkling productions.

The wine presents with a straw yellow colour of clarity and transparency. The nose offers an intense and persistent aroma of hazelnut — the same aromatic signature shared with the Fiano di Avellino, reflecting the Irpinian territory's particular contribution — with distinct side hints of herbaceous and citrus character. On the palate, the acid impact is present and characterful — this is not a wine of soft, yielding effervescence, but one of genuine backbone and mineral salts concentration. The body is delicate and balanced, the whole experience clean and distinctive.
