Opere is the estate's more ambitious still Verdicchio expression — the wine that takes the grape of Castelli di Jesi beyond the accessible freshness of Isola into a register of greater complexity and structural depth. The name speaks of works — of the labour and craft that a wine of this character requires, of the multiple operations that between vineyard and cellar shape its final expression.
The production protocol is one of genuine precision. The clusters are pressed gently and quickly — the gentleness of pressing being as important as its speed in capturing the aromatic compounds that make Verdicchio at its finest so compelling — yielding forty percent free-run must. This is a significant proportion: free-run must, which flows from the grape without any mechanical pressure, carries the purest and most concentrated aromatic expression of the variety. The remaining sixty percent, pressed more firmly, contributes structure and body.
After pressing, the wine spends fourteen months in steel on its fine lees, kept in suspension through periodic batonnage. This is one of the most extended lees contact periods in the estate's range — a commitment that develops the complexity, texture, and the particular autolytic richness that extended contact with active lees reliably produces. The resulting wine is described as the finest maritime expression of Verdicchio — a description that captures both the wine's mineral, briny character and its capacity to pair with the broadest range of seafood preparations.
Distinctive briny and mineral notes characterise Opere's aromatic profile alongside a rich array of fruity aromas — the combination that makes this wine one of the most specifically and most immediately Marche whites in the portfolio. Highly food-friendly and well suited to white meats and vegetable dishes as well as pasta with white ragù.
