CLO Pinin is the wine through which Lavic Plenty of Etna pays its deepest tribute — to Pippo Iuppa, known as Pinin, father of the estate's founder. It is a wine born from gratitude and from ambition in equal measure: the gratitude of a son who understands what he has inherited, and the ambition of a winemaker who intends to honour that inheritance at the highest possible level.
The Etna DOC Superiore designation — the highest tier within the Etna DOC appellation — is earned by this wine through its origin in the Contrada Salice, a cru of the Milo zone with ideal terrace exposure, medium-textured lava soil, and the broad temperature range that marks the most distinguished vineyard sites on the mountain. The Carricante grapes that form its basis are drawn from vines planted on the classic dry lava stone terraces of Etna, tended by workers whose knowledge of this land is generational and whose attention to the vine is individual.
The winemaking process at the estate is one of deliberate precision. The grapes undergo soft pressing to preserve the delicacy of the fruit, followed by controlled temperature fermentation. Ageing takes place in stainless steel tanks for eight months — a choice that preserves the mineral freshness of the Carricante without the interference of wood — before a further minimum of eight months in bottle. The total maturation time before release is thus considerable: this is wine made with patience, and it rewards patience in kind.
In the glass, CLO Pinin presents with the clarity and quiet confidence of a wine that knows what it is. The colour is straw yellow with the greenish highlights characteristic of young, mineral-driven Carricante. The nose offers stone fruit, floral delicacy, and the clean mineral signature of volcanic soil — complex without being aggressive, refined without being absent. On the palate, the wine demonstrates the structural ambition of the Superiore designation: there is weight here, and length, and the kind of acid backbone that suggests this wine will develop gracefully over time.
The meticulous selection of the finest bunches, the careful vinification, and the ideal ageing conditions combine in CLO Pinin to produce the estate's most complete statement. Available through UniqueWines in strictly limited quantities.
