N'Ombra de Sol — A Shadow of Sun — is the most historically resonant wine in the Colline Guizzette portfolio: a Prosecco Col Fondo, a testimony to the long viticultural and oenological tradition of the Valdobbiadene area, produced through second fermentation in the bottle during springtime. This is the oldest known method of Prosecco production — the technique used before pressurised tanks, before disgorgement, before the modern appellation system existed.
The Col Fondo method involves the addition of a small amount of grape must to the base wine, triggering a second fermentation in the sealed bottle. The resulting carbon dioxide creates the gentle effervescence, and the yeast sediment remains in the bottle — the deposit that gives the style its name (col fondo = with the deposit). Natural yeasts remaining act as a natural preservative, making this wine genuinely zero residual sugar and genuinely natural.
Made from grapes grown exclusively within the Valdobbiadene DOCG area, N'Ombra de Sol is categorised as semi-sparkling. The name is Venetian dialect: A Shadow of Sun — the quality of light on the Valdobbiadene hillside that makes this territory among Italy's most beautiful wine landscapes. The oldest Prosecco tradition applied by one of the area's oldest families. Available through UniqueWines.
