Settefilari is the most distinctly Emilian wine in the Aljano portfolio — a great dry and sparkling red Lambrusco made from all seven types of indigenous Emilian Lambrusco vines. The name carries the number seven — Sette — in explicit tribute to the seven varieties that contribute to its production, and the wine represents both a statement of indigenous variety completeness and a demonstration of what the full complexity of Emilia's Lambrusco tradition can produce when all its components are united in a single, organically farmed expression.

The seven indigenous Lambrusco varieties of Emilia — Lambrusco Grasparossa, Lambrusco Salamino, Lambrusco Marani, Lambrusco Maestri, Lambrusco Montericco, Lambrusco Viadanese, and Lambrusco di Sorbara — each contribute a different dimension to the blend: different levels of colour, acidity, tannin, aromatic intensity, and fruit character that together create a Lambrusco of greater complexity and authenticity than any single-variety expression can achieve. This is the tradition's full palette in a single bottle.

Aljano's organic philosophy applies to Settefilari with the same rigour as to all the estate's wines. The Lambrusco varieties, cultivated without synthetic chemicals and with minimum sulphites, express their territorial character with a purity and a freshness that conventional production cannot replicate. The pre-phylloxera Spergola of Brezza di Luna may be the estate's most historically resonant white, but Settefilari is its most culturally resonant red — a wine that embodies the full breadth of what Emilia's winemaking heritage represents.

Settefilari is the perfect wine for the Emilian table: the traditional companion for the rich, fatty preparations of Emilia's culinary tradition — tagliatelle al ragù, tortellini in brodo, charcuterie, Parmigiano-Reggiano — whose acidity and freshness clean and refresh the palate between the most indulgent courses that Italian cuisine offers.
