In the Siena hills, San Gregorio tends each vine by hand with ancient farming care, producing four wines from the Chianti Colli Senesi appellation's full indigenous palette: Sangiovese, Canaiolo, Colorino, Barbera, Ciliegiolo, Malvasia, and Grechetto. The Chianti and Chianti Riserva DOCG, a pure Canaiolo, and the Poggio Pagliaio blend — each a precise, unaffected expression of what the Colli Senesi can do. Ancient farming care. Siena hills. Available through UniqueWines.
In the vineyards of San Gregorio, each vine receives the painstaking care typical of ancient farming techniques — manual pruning, tying, hoeing, and cleaning. The grape harvester selects the best bunches for each type of grape, which then go to the cellar for separate vinification. The cultivation of vines to produce a Chianti such as theirs is subject to strict regulations designed to protect the product's quality, and the estate honours those regulations with the seriousness of a producer who understands that quality is first made in the vineyard.
The farm's grapes include Sangiovese, Canaiolo, Colorino, Ciliegiolo, Barbera, Malvasia, and Grechetto — a palette of varieties that reflects the full richness of the Siena hills and allows the estate to produce wines across the complete range of Chianti's indigenous variety tradition.
CHIANTI DEI COLLI SENESI DOCG is the estate's classic Chianti — 90% Sangiovese with 10% Colorino, fermented eight to ten days in cement, matured in steel, with three months bottle ageing. Ruby red with red fruit, cherry, and wild fruit aroma, it has a medium tannic structure with a long and persistent finish — a wine of genuine Chianti character, suited to everyday excellence rather than special occasion performance.
CHIANTI RISERVA DEI COLLI SENESI DOCG is the elevated expression: the same 90/10 Sangiovese-Colorino blend, but fermented ten to twelve days in cement, matured ten to twelve months in barrel, and with a minimum of four months in bottle. Ruby red with red fruit, cherry, and wild fruit aromas that persist through a structure of greater depth. At first taste very pleasant, with a good structure and long persistence, it is easy to drink daily while being capable of rewarding those who wait.
CANAIOLO DEI COLLI SENESI is a 100% Canaiolo of unusual distinction — fermented six to eight days in cement, aged three months in bottle. Ruby red with marked floral tones of roses, of medium structure, fresh and fragrant. Canaiolo in its pure form is a genuine rarity in the current Chianti landscape, and this expression does the variety proud.
POGGIO PAGLIAIO is a blend of Barbera and Colorino harvested in early October — fermented fifteen days in steel at 26-28 degrees, matured in barriques, and aged six months in bottle at 14% alcohol. The wine presents with a lively intense red colour, mature red fruits with vanilla and spice tones, and a personality and character with structured and well-balanced tannins. CAMARS completes the range as a further blend expression. Available through UniqueWines.
