Garofano

Severino Garofano created Negramaro as the world knows it. His family's estate in Puglia — twenty hectares of rare cultivars including an ampelographic collection of extinct Salento varieties — produces four wines that demonstrate what that grape is genuinely capable of: the Simpotica, the Eloquentia, the summit Le Braci, and the Negramaro-Malvasia blend Rosso dei Censi. Two centuries of Puglian winemaking. The author's estate. Available through UniqueWines.

Severino Garofano was not simply a winemaker. He was an author of wine — the man who created Negramaro as the world knows it today. The family he built in Puglia, and the tradition of winemaking they have carried forward, bears the weight of that achievement with quiet confidence. Two centuries of production in the Puglia region; twenty hectares of vineyards of the cultivars Negramaro, Primitivo, Malvasia Nera, Malvasia Bianca Antica, and Susumaniello — including the result of a search for native varieties now extinct, which has led to new experimental plants and a real ampelographic collection of Salento.

The estate has never made ordinary wine. Its wines are described, without false modesty, as exclusive and worldwide acclaimed as miracles. A wine tradition since the 1940s guides the design of each new wine; twenty hectares of some of Puglia's rarest cultivars support a portfolio that demonstrates what the south of Italy's most characterful red grape — Negramaro — is genuinely capable of.

SIMPOTICA is the estate's most approachable Negramaro — an intense ruby red of elegant tannins in their utmost sapidity, a fresh and genuine taste catching the palate's sensitivity with originality and brilliance. Scents from the estate's many agricultural species — licorice, wild berries, soft balsamic herbs — emerge first at nose, then at palate.

ELOQUENTIA (the Garofano expression, distinct from the Addimanda wine of the same name) is a deeper study of Negramaro: intense ruby red with notes of sweet suede giving way to spices and cherries. Soft in taste, leading to an elegant and genuine flavour that persists. Born for meditative moments as much as for the privilege of offering a unique tasting experience to guests.

LE BRACI is the estate's summit Negramaro — from top grapes subjected to overmaturation or induced wilting, giving a complex structure that is then planned for ageing in small oak barrels. Purple intense red with grenadine reflections; intense variety of flowers persistent to the olfactive experience; a design of a wine generous in taste and genuine in flavours, producing a regal and sumptuous experience.

ROSSO DEI CENSI is the estate's blend: 90% Negramaro with 10% Black Malvasia, generating a unique taste that combines the structure of Negramaro with the aromatic complexity of Black Malvasia. Balance and a structured body that pair perfectly with meat meals or ragout pasta.

The wines of the Garofano family are born from clean and sustainable agriculture, born from an ampelographic collection without parallel in Salento, and shaped by a winemaking tradition that Severino Garofano established and his heirs continue to honour. Available through UniqueWines.
